BROCCOLI AND RICE CASSEROLE

2/3 cup uncooked rice
1 (10oz.) pkg. frozen, chopped broccoli
1 (8oz.) pkg. Cream cheese
1 can cream of chicken soup
Cheddar cheese for topping
Cook rice by box directions, drain. Thaw broccoli in saucepan over low heat. Add cooked rice.
Melt cream cheese in cream of chicken soup. Stir into rice and pour into buttered casserole dish. (Can be prepared to this point, and put into freezer to be baked when needed).
Bake in 350 oven for 25-30 minutes. Top with ½ to 1 cup grated cheddar cheese, and heat until it bubbles. Or, put the entire mixture, including cheddar cheese into a slow cooker and cook for 2 hours on low.
