cakeMix - Crumb Cake #1

for cake:
1 1/2 cups biscuit baking mix
1/2 cup white granulated sugar
1/2 cup milk or water
2 tablespoons shortening
1 teaspoon vanilla
1 egg

for topping
1/2 cup flaked coconut
1/3 cup packed light brown sugar
1/4 cup chopped nuts, optional
2 tablespoons softened butter
2 tablespoons milk

Preheat oven to 350 degrees F.
Grease and flour an 8 inch round baking pan.
for the cake:
Beat all cake ingredients together in large bowl, using
mixer's low speed for 30 seconds, scraping bowl constantly.
Beat on medium for 4 minutes, scraping bowl occasionally.
Pour into baking pan.
Bake 30 to 35 minutes or until tester comes out clean.
Let cool slightly.

for the topping:
Combine all ingredients in a bowl and spread over cake.
BROIL about 3 inches from heat until golden brown, about 3 minutes.
Makes 8 servings.
