Recipe Introduction

This cake is so moist and rich that it doesn't need any frosting. However, a lemon or cream cheese frosting makes a nice contrast.

scratch - Extra Moist Banana Cake

3 large ripe mashed bananas, the riper the better
6 tbsp. butter, room temperature
1 egg
1 c. sugar
1 1/2 c. flour
3 tbsp. milk
1 tsp. baking soda

Preheat oven to 150. Grease an 8" cake pan.
Cream the butter and sugar together until fluffy.
Beat the egg into the butter and sugar until well blended.
Then slowly add the flour until just mixed.
Add the mashed bananas to the mixture.
Dissolve the baking soda in the milk, and add to the cake batter.
Pour the batter into the cake pan.
Bake for about 45 minutes or until a tester comes out clean.
Should be a deep golden brown.
