List of Ingredients

for the cookies:
1/4 cup shortening
2/3 cup white granulated sugar
1 egg yolk
1/2 teaspoon vanilla
1 teaspoon lemon juice
1 1/3 cups flour
1/2 level teaspoon baking powder
1/4 level teaspoon baking soda
1/4 teaspoon salt
1, 10 ounce package frozen strawberries,
...thawed and drained

for the glaze:
1/4 cup sugar
2 tablespoons strawberry juice
1 teaspoon lemon juice
coconut, optional


Recipe

Preheat oven to 375. Grease cookie sheets.
Cream shortening, sugar, yolk, vanilla and lemon juice together.
Mix flour, baking powder, baking soda and salt together. Set aside.
Add strawberries to creamed mixture alternately with dry ingredients.
Drop by scant teaspoonfuls onto cookie sheets.
Bake for 8 - 10 minutes. Let cool.

for the glaze:
Combine sugar, strawberry juice and lemon juice. Heat to dissolve sugar.
Pour glaze over cookies.
Can then sprinkle with coconut if desired.
