drop - Pineapple Oatmeal Cookies
1 1/2 cups packed light brown sugar
1 cup butter flavored shortening or margarine
1 egg
1, 20 ounce can crushed pineapple, in syrup or juice,
...drained, set aside 1/2 cup
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
3 cups rolled oats
1 cup raisins
1 cup toasted and chopped nuts, optional
Preheat oven to 350 F. Lightly grease baking sheets.
In a large bowl, beat together the sugar and margarine until
light and fluffy. Beat in the egg, pineapple and syrup.
In another bowl, combine the remaining ingredients together.
Then blend the dry ingredients into the sugar mixture.
Drop by heaping tablespoonfuls onto baking sheets, shaping
with the back of the spoon. Bake for 20 - 25 minutes, until
golden. Let cool on wire racks. Makes about 2 1/2 dozen. Recipe
