    fresh - Apple Roasted Chicken Dinner

    2 tbsp. + 2 tbsp. + 4 tbsp. butter, softened
    1/4 tsp. minced garlic
    1 4 to 5 lb. roasting chicken
    1 onion, cut into wedges
    1 tsp. dried parsley
    4 chicken bouillon cubes
    1/4 tsp. thyme leaves
    3 c. baby carrots
    6 potatoes, cut in quarters
    2 1/2 c. apple juice

    Preheat oven to 375. Need a 4 quart baking dish.
    Blend 2 tbsp. of the butter with garlic and spread inside the chicken.
    Rub the outside with another 2 tbsp. of the butter.
    Place chicken and onion wedges in baking dish.
    Sprinkle with parsley and throw in the bullion cubes.
    Melt the 4 tbsp. of butter in large skillet.
    Add thyme, carrots and potatoes and saute about 10 minutes, stirring frequently.
    Pour into casserole around chicken and onions.
    Pour the apple juice over all.
    Cook for 30 minutes, then baste.
    Continue roasting and baste every 20 minutes until done, for about 1 1/4 hours.
    If necessary, add more apple juice or water to baking dish to keep from drying out.
    (Cover chicken with foil if it starts to get too brown.)
    Transfer chicken to platter and surround with vegetables to serve.
