leftover - Chicken Stuffed Potato Shells
1 1/2 cups cooked chicken
2 large baked baking potatoes
salt and pepper to taste
1 cup freshly grated Parmesan cheese
1/2 cup sour cream
1/2 cup mayonnaise
2 tablespoons finely chopped red onion
1 tablespoon Italian bread crumbs
Halve the cooked potatoes lengthwise and scoop out center.
(Use, scooped potatoes for another use.) Mix chicken,
cheese, sour cream, mayonnaise, onion, salt and pepper
together. Stuff potato shells with chicken mixture, until
gone. Sprinkle with bread crumbs. Bake uncovered, at 350
degrees F for about 30 minutes.
