Fish - Herbed Fish Roll Ups

List of Ingredients
3 chopped shallots
1 pound white fish fillets, rinsed + patted dry
1 1/2 teaspoons dried basil
1/2 teaspoon crushed rosemary
1/4 teaspoon ground black pepper
1/4 cup vermouth
1/4 cup fresh lemon juice
1 - 2 tablespoons fresh parsley, optional
Recipe
Preheat the oven to 350 degrees F.
Coat a casserole dish with cooking spray.
Sprinkle the shallots over the bottom of the casserole.
Mix the basil, rosemay, and pepper together.
Sprinkle each fillet with the herb mixture.
Starting with the widest end of the fillet, roll up each fillet.
Place in on top of the shallots, side by side, in the casserole dish.
Pour the vermouth and and then the lemon juice over the fillets.
Bake for 25 minutes, until fish is opaque.
Garnish with parsley, if desired.
Makes 4 servings.
