Fish - Scallops with Apples + Pea Pods

List of Ingredients
3 small unpeeled, thinly sliced apples
1 medium chopped onion
1 medium chopped red bell pepper
3 ounces snow peas, trimmed
1 tbsp. + 1 tbsp. vegetable oil, divided
12 ounces scallops
1/4 c. apple cider
2 tsp. cornstarch
1 tbsp. reduced sodium soy sauce
salt and pepper to taste
Recipe
Place 1 tbsp. of the oil in a large frying pan.
Use a medium/high heat to stir fry the apples, onion, bell pepper, pea pods about 3 minutes, until crisp tender.
Remove from the pan.
Stir fry the scallops in the frying pan in the other 1 tbsp. oil about 4 minutes, until cooked and opaque.
Combine the cider, cornstarch, and soy sauce.
Add to pan and cook for 1 - 2 minutes, until the mixture boils and thickens.
Stir in the apple mixture and heat to boiling.
Season to taste with salt and pepper.
