Fish - Shrimp + Bean Dinner

List of Ingredients
2 teaspoons Olive oil
1/2 cup diced onion
1 cup diced red pepper
1/2 cup diced celery
1 pound cleaned medium size shrimp
1 cup canned black beans or black eyed peas,
...or black beans, rinsed + drained
2 teaspoons dried parsley or 2 tablespoons freshly minced
salt + pepper to taste
dash crushed red pepper
Recipe
Heat the oil in a frying pan over a medium heat.
Add onion and saute for 2 minutes.
Add red pepper. Saute for 2 minutes.
Add celery. Saute for 2 minutes.
Add shrimp. Saute about 5 - 6 minutes, or until the shrimp
turn pink.
Add the beans, parsley, salt, pepper, and crushed pepper.
Cook all together for 1 minute.
Makes 4 servings.
