Fajita Pizza

List of Ingredients
2 pizza crusts
1 tsp. olive oil
1 sweet greem pepper, cut in strps
1 sweet red pepper, cut in strips
1 sweet orange pepper, cut in strips
1 sweet yellow pepper, cut in strips
2 medium sliced onions
1 tsp. minced garlic or 2 cloves fresh minced
4 tsp. fajita seasoning from recipe below
1 16oz. jar salsa
1 15oz.can corn, drained, no salt preferred
1 15oz. can black beans, rinsed and drained
1 c. reduced fat shredded Montery Jack cheese
1 c. reduced fat shredded Cheddar cheese
the fajita seasoning mix:
1 tbsp. chili powder
1 1/2 tsp. ground cumin
1/2 tsp. dried oregano
1/2 tsp. garlic powder
1/4 tsp. hickory smoke style seasoningRecipe
Preheat oven to 425. Place 2 uncooked pizza crusts on pans.
In a large skillet with lid, heat oil over medium-high heat; saut� peppers, onions and garlic until tender- crisp.
Stir in fajita seasoning mix and cook an additional 1 - 2 minutes. Remove from heat.
Meanwhile, in a mixing bowl, stir together salsa, corn and black beans.
Spread half of sauce mixture on each pizza shell.
Top each with half the saut�ed pepper and onion mixture and half the cheese.
Bake in the preheated oven for 15 - 20 minutes, or until crust is crisp and cheese is melted and just beginning to brown.
If desired, top with guacamole and fat free or soy "sour cream."
Makes 2 pizzas.
