    Frozen Rhubarb Yogurt

    5 c. chopped rhubarb
    3/4 c. + 1/2 c. sugar, divided
    2 c. fat free plain yogurt
    2 tbsp. orange juice
    1/8 tsp. red food coloring

    Recipe



    Combine rhubarb and 3/4 c. sugar in a large pan.
    Let stand 15 minutes.
    Bring to a boil, reduce heat and simmer, uncovered 10 minutes or until thickened, stirring frequently.
    Remove from heat and cool completely.
    Stir in yogurt, orange juice, food coloring and remaining 1/2 c. sugar.
    Cover and refrigerate overnight.
    Freeze in an ice cream freezer according to instructions.
    Transfer to a freezer container and freeze 2 - 4 hours before serving.
