    Rhubarb/Cranberry Relish

    1 20os. pkg. package frozen rhubarb
    4 c. fresh cranberries or frozen cranberries
    2 c. white sugar
    1 c. water
    1 c. chopped crystallized ginger
    1/4 c. rind of grated lemon

    Recipe



    Combine all ingredients in a large saucepan.
    Cook over a medium/low heat until the sugar dissolves, stirring occasionally.
    Bring to a boil and cook and stir, until cranberries pop, about 10 minutes.
    Remove from heat.
    Cover and let stand 15 minutes.
    Refrigerate until well chilled.
    Makes 20 servings.
