Rhubarb Muffins #1
2 c. flour
3/4 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
3/4 c. chopped nuts, optional
1 large egg
1/4 c. vegetable oil
2 tsp. grated orange rind
3/4 c. orange juice
1 1/4 c. finely chopped rhubarb
Preheat oven to 350. Lightly grease a muffin pan.
Combine flour, sugar, baking powder, baking soda, salt and nuts. Set aside.
Beat egg and oil together.
Add orange juice to egg mixture and blend.
Add wet mixture flour mixture.
Lightly blend in rhubarb.
Bake for 25 - 30 minutes or until tester comes out clean.
Makes 12 muffins.
