    Rhubarb Pudding Cake

    List of Ingredients




    for the cake:
    1 beaten egg
    1 1/2 c. sugar
    2 tbsp. butter flavored shortening
    1/2 c. milk
    1 1/4 c. flour
    3 1/2 tsp. baking powder
    1/2 tsp. salt

    for the topping:
    3 c. diced rhubarb
    1 heaping cup sugar
    2 c. boiling water

    Recipe



    Preheat oven to 400. Well grease a 9x13x2" pan.
    (Or you can use an 8 or 9" square pan if you like a thicker cake.)

    for the cake:
    Combine egg, sugar, shortening, milk, flour, baking powder and salt and mix well.
    Spread in pan.

    for the topping:
    Combine rhubarb, the heaping cup of sugar and boiling water together and pour over cake batter.
    Bake for 25 minutes or until cake is golden brown.
