Cucumber Soup #2, creamy, cold

This is a great soup to make, especially if you have an
overabundance of cucumbers from your garden.

Cucumber Soup #2, creamy, cold
3 medium cucumbers, peeled, seeded and cut in chunks
3 cups Swansons low sodium chicken broth
1 1/2 cups light sour cream
1 1/2 cups half & half
3 tablespoons apple cider vinegar
1/4 cup chopped chives
1 teaspoon dry dill or 5-6 sprigs fresh
1/4 cup dry parsley or 1/2 cup chopped fresh parsley
2 fresh tomatoes, chopped
Process cucumbers and chicken broth in blender -
leave thick and do not overblend.
In a large bowl, combine remaining ingredients
except tomatoes.
Mix well and chill several hours.
Before serving stir in chopped tomatoes in each bowl.
