    Hobo's Carrot Cake

    List of Ingredients


    • 2 cups sugar
    • 2 cups flour
    • 2 tsp cinnamon
    • 2 tsp baking soda
    • 4 eggs beaten
    • 1 (8 oz) can CRUSHED pineapple and juice
    • 1 1/4 cups oil
    • 2 tsp vanilla
    • 1 tsp salt
    • 3 cups grated carrots
    • 1 cup pecans, chopped
    • 1/2 cup coconut
    • ************************************************
    • CREAM CHEESE FROSTING INGREDIENTS
    • 6 oz cream cheese
    • 3 1/2 cups powdered sugar
    • 1/2 cup butter
    • 1 tsp lemon juice
    • dash of salt


    Instructions


    1. Preheat oven to 350 degrees.

    2. Sift flour, sugar, cinnamon, baking soda and salt into a bowl.

    3. In another large bowl, mix eggs, pineapple and the juice, oil, vanilla, coconut, carrots and pecans.

    4. Stir in the dry ingredients, mix well.

    5. Bake in a well greased, 9x13x2" pan for about 40 minutes or till a toothpick comes out clean.

    6. Let cool 1 hour before frosting the cake.

    8. CREAM CHEESE FROSTING DIRECTIONS

    9. With a hand mixer, cream together cream cheese and butter.

    10. Add the salt and lemon juice.

    11. Slowly add the powdered sugar and mix after each addition.

    12. Mix all until smooth. Spread with a rubber scraper.



    Final Comments


    Absolutely wonderful carrot cake and does NOT taste at all like vegetables.
