    Chewy Coconut Macaroons

    adapted from BHG Christmas Cookies 2002

    List of Ingredients




    2 2/3 cups flaked coconut
    2/3 cup flour
    1/3 cup flour
    Pinch salt
    4 egg whites
    � tsp. almond extract

    Recipe



    Preheat oven to 325 degrees. Place parchment paper on cookie sheets.
    In a medium bowl combine coconut, sugar, flour and salt. Stir in egg whites and almond extract. Drop by rounded teaspoons 2� apart onto cookie sheet.
    Bake for 20 to 25 minutes or until edges are golden brown. Transfer cookies to wire racks; cool completely.
