4 Tbsp. butter
3 eggs
1 cup flour
1 cup milk
1 tsp. salt
1 tsp. baking powder
1 lb. Monterey Jack cheese, grated
2 packages chopped spinach, thawed and drained



Recipe



Preheat oven to 350�F. In a 9� by 13� by 2� baking pan, melt butter in oven. Remove.

In a large bowl, beat eggs, then add milk, flour, salt and baking powder. Mix well, then add cheese and spinach. Pour mixture into baking pan and spoon it around a bit to mix in the melted butter (don�t do lots of mixing though).

Bake 35 minutes. Remove from oven and cool 45 minutes in order to set. Cut into bite sized pieces.
