    CHERRY-NUT QUICK BREAD

    Beat together:
    1/2 C. granulated sugar
    1/2 C. packed brown sugar
    1/4 C. shortening
    2 eggs

    Add:
    1 C. buttermilk
    1/4 C. maraschino cherry juice
    2 1/2 C. flour
    3 t. baking powder
    1/2 t. baking soda
    1 t. salt

    Fold in:
    1/2 C. maraschino cherries, chopped and drained
    1 C. chopped nuts

    Heat oven to 350. Grease bottom only of loaf pan. Bake for appr. 60 minutes.

    NOTE: I changed some of the ingredients to suit our taste:
    I used 4 T. butter instead of shortening. I used milk instead of buttermilk, omitted the cherry juice and added 1/4 C. more of milk instead. Omitted the baking soda and used 3 1/2 t. baking powder, omitted the nuts. Added 1 1/2 C. chopped cherries instead of only 1/2 C. Much better with more cherries. Lou
