Topping:
2 T butter
1 T water
4 T light brown sugar
peanuts
Batter:
2 C flour, sifted
1 C light brown sugar
1 egg
1 C sour milk or buttermilk
2 T peanut butter
2 T butter, melted
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. saltRecipe
Heat oven to 350�F. Spread 2 tablespoons of butter on the bottom of a loaf pan. Cover with light brown sugar and peanuts. Sprinkle the water over the mixture.
In a mixing bowl, beat the egg and the light brown sugar together. Stir in the peanut butter and melted butter. Add the milk. Stir in the flour, baking powder, baking soda and salt; mix well. Pour batter into the prepared loaf pan. Bake for 1 hour. Remove from oven and let stand on wire rack for 10 minutes. Gently run a knife around the sides and remove bread upside on a platter. Serve with butter or by itself.
Review posted by: soccermomMI: Yummy...This was fantastic! A mild PB taste, nothing overpowering, very good. It was very moist. I forgot to use the topping, I was thinking of just omitting the peanuts, for the reason of braces, but completely forgot the entire topping. I did double the amount of PB. Everything else was exactly as listed. This was rated a "KEEPER". Might want to try a slice with Nutella spread. Thanks John!! Joyce
