BROCCOLI, CHICKEN & RICE CASSEROLE

2 1/2 C minute rice, uncooked
3-4 C frozen broccoli flowerettes, thawed (enough to cover bottom of 13x9pan)
1 can cream of chicken soup
1 can cheddar cheese soup
1 C mayonnaise
1 soup can of milk (I used about 3/4 full)
3 C cubed, cooked chicken
1 1/2 C shredded mozzarella cheese
salt and pepper to tasteRecipe
Cook rice according to package directions.
Arrange thawed broccoli on the bottom of a greased 13x9 pan. Spoon cooked rice over broccoli.
In a mixing bowl, combine soups and mayo. Stir in enough milk to make it "saucy". Add chicken, 1/2 C of the cheese and salt and pepper. Pour over rice. Sprinkle remaining cheese on top.
Bake at 375�F for 35 mins or until golden brown. (I found that mine took closer to 45-50 mins.)
NOTE: This makes A LOT!
