    Roasted Turkey with Herbs

    Thawed Turkey-12-18 pounds
    3 - 5 sprigs fresh sage
    2 tablespoons fresh chopped rosemary
    3 cloves garlic, sliced thinly
    Salt and pepper to season

    Recipe



    Lift and loosen the skin. Place the sprigs of the sage under the skin. Reserve some sage to put in the cavities of the unstuffed turkey. If your turkey is stuffed then place sprigs of sage around the tied legs and in any crevices of the turkey. Stuff and sprinkle the chopped rosemary and sliced garlic under the skin and on top of the turkey along with salt and pepper to season. Follow directions for roasting the turkey as usual. I either place in an electric roaster for about 2 hours or bake in the oven for about 3 hours depending on the size of the turkey. A meat thermometer should read about 165 degrees from the thickest part of the breast. I roast mine at 325 degrees and baste on and off with the juices.
