    Bisquick Velvet Fudge Cake

    List of Ingredients

    1 1/2 cups Bisquick® baking mix
    1/3 cup sugar
    1 egg
    1/2 cup milk -- or water
    1/2 cup semisweet chocolate chips -- melted and cooled
    2 tablespoons shortening
    1 teaspoon vanilla
    Chocolate Coconut Frosting
    1/2 cup semisweet chocolate chips -- melted
    3 1/2 ounces flaked coconut -- 1 can
    1/4 cup water


    Cake: Preheat oven to 350 degrees F.

    Blend all ingredients except frosting in large mixing bowl on low
    speed 1/2 minute, scraping bowl frequently. Beat 4 minutes at medium

    Pour batter into greased and floured pan, 8 x 8 x 2-inches.

    Bake 30 to 35 minutes or until wooden pick inserted in center comes
    out clean. Cool and frost.

    Frosting: Mix semisweet chocolate chips, coconut and water together.
    Use to frost cake.

    Serves 9.
