No Bake Chocolate Amaretto Cheesecake

1 cup coconut cookie crumbs
1/4 cup ground almonds
1/4 cup (1/2 stick) melted butter
1 envelope unflavored gelatin
1/4 cup cold water
2 packages (8 ounces each) soft-style cream cheese
1 cup sugar
1/2 cup unsweetened cocoa powder
3/4 teaspoon almond extract
1 teaspoon vanilla extract
1 cup cold whipping cream, whipped
Preheat oven to 350 degrees.
Prepare crust: In medium bowl, combine cookie crumbs, ground almonds
and melted butter. Press mixture into 9-inch springform pan. Bake in
preheated oven 7 minutes.
In small saucepan, sprinkle gelatin over water and let stand 1
minute. Cook over low heat, stirring, until gelatin is dissolved,
about 3 minutes.
In separate bowl, beat cream cheese and sugar until light and fluffy,
about 2 to 3 minutes. Add cocoa, almond and vanilla extracts and
gelatin mixture and beat until blended. Fold whipped cream into
chocolate mixture. Pour over crust and refrigerate until firm, about
6 hours. Makes 12 servings.
