    List of Ingredients

    1 Egg
    1 Egg white
    1 Cup Plain low-fat yogurt
    3 tbsp Vegetable Oil
    1 Cup All-purpose flour
    1/4 Cup Sugar
    1 tsp Baking powder
    1/4 tsp Baking soda
    1/4 tsp Salt
    1 Cup Old-fashioned rolled oats
    Maple syrup or fruit syrup


    Combine the egg, egg white, yogurt, and oil in blender; whirl until smooth. Add the flour, sugar, baking powder, baking soda and salt; whirl to blend. Add the oats; whirl briefly just to mix.
    Heat a griddle or large skillet over medium heat. Lightly brush with vegetable oil. Spoon about 3 tablespoons batter for each pancake onto griddle. Cook until bubbles form on top, 2 to 3 minutes. Flip over; bake until browned, about 2 minutes. Keep warm until all pancakes are cooked.
    Makes 4 servings
