� Four baking potatoes
� 175g (60z) lean back bacon
� A dash of vinegar
� Four Lion Quality eggs
� Four tablespoons snipped fresh chives
� 100g (3� oz) cherry tomatoes, halved
� Splash of semi-skimmed milkRecipe
1.Preheat the oven to Gas Mark 7/220�C/425�F. Bake the potatoes for about an hour or until tender. Alternatively prick the potatoes all over with a fork and microwave on high for 10 minutes or until well-cooked but not overdone.
2.Meanwhile cook the bacon under a hot grill for 6-8 minutes, turning once, until it is crisp and golden. Snip into bite sized pieces and set aside.
3.When the potatoes are cooked, bring a large frying pan of salted water to the boil. Add the vinegar. Poach the eggs in the simmering water for 3-5 minutes until cooked to your liking.
Serves 4.
