Elvis' Fried Potato Sandwich

1/2 lb / 225 g vegan bacon (Redwood Foods Rashers are very good), browned in some oil (save the oil!)
2 russet potatoes, sliced 1/2 inch / 13 mm thick
Half an onion, chopped
Fry the potatoes and onions in the bacon grease until well done. Layer bacon, potatoes, and onions on white bread. Smear generously with mustard. Sear briefly under an open grill.
Yield: 1 sandwich.
When Elvis was in the army, he once ate 5 of these in one sitting.
