List of Ingredients
1 lb. (16 oz.) Ronzoni Rigatoni
2 tbs. olive oil (divided)
1 � lb. chicken cut in 2-inch cubes
1 medium onion (diced)
1 garlic clove (chopped)
2 jars (28 oz. each) tomato sauce
2 bags (10 oz. each) fresh spinach cleaned and shredded
4 cups (16 oz.) Shredded mozzarella cheese
1/8 tsp. salt & pepper
Recipe
Heat olive oil in a large skillet, add chicken and cook until lightly browned. Place cooked chicken to the side. Cook pasta according to package directions, drain. Meanwhile, heat olive oil and saut� onions and garlic until soft, add tomato sauce and simmer 8 minutes, add cooked chicken & spinach and continue to simmer additional 2 minutes. Toss together pasta, chicken, sauce mozzarella and salt & pepper. Serve immediately.
