Drambuie Roasted Chicken Wings

2 T Corn Oil
2 lbs Chicken Wings, thawed if frozen
3 each Roma Tomatoes, cut into medium dice
� cup Drambuie Liqueur
� cup Italian Seasonings
� tsp Cayenne Pepper
1 T Salt
1 tsp Pepper
Recipe
Preheat oven to 400 degrees F.
Heat oil in a large saut� pan over high heat. Add the chicken wings and sear on both sides until browned. Transfer to a baking pan. You might have to do this step in batches.
Using the same pan, saut� the tomatoes for 3 minutes on medium heat. Remove pan from heat and add the Drambuie. Return to heat and add Italian seasonings and cayenne pepper; simmer for 3 more minutes.
Pour tomato mixture over the chicken wings. Sprinkle salt and pepper over the wings and bake for 30 minutes, or until fully cooked.
