    List of Ingredients




    1 Tbs. canola oil
    1 cup finely chopped onion
    1 large shallot
    1 cup finely chopped celery
    1 red bell pepper, diced
    8 oz. vegetarian sausage, chopped
    12-oz. box cornbread stuffing cubes
    1/2 cup fresh parsley finely chopped
    1 tsp. dry sage
    black pepper to taste
    1-3/4 cups chicken flavored vegetable broth
    nonstick cooking spray

    Recipe



    Heat the oil in a large skillet. Add onion and shallots, then saut� for five to 10 minutes. Add celery, bell pepper and sausage, then cook five minutes more. Remove from heat. Add parsley, sage and black pepper, then stir in cornbread cubes and toss well.

    Finish by stirring in vegetable broth gradually, then pour mixture into a baking dish covered in nonstick cooking spray. Bake covered at 350 degrees for 30 minutes.
