    List of Ingredients


    • 1 can black beans, rinsed & drained
    • 1 can kidney beans, drained
    • 1 can cannellini beans, rinsed & drained
    • 1 green pepper, chopped
    • 1 red pepper, chopped
    • 10 oz pkg frozen corn
    • 1 red onion, chopped
    • 1/2 cup olive oil
    • 1/2 cup red wine vinegar
    • 2 tbls fresh lime juice
    • 1 tbls lemon juice
    • 2 tbls sugar
    • 1 tbls salt
    • 1 clove crushed garlic
    • 1/4 cup chopped fresh cilantro
    • 1/2 tbls cumin
    • 1/2 tbls pepper
    • 1 dash hot peper sauce
    • 1/2 tsp chili powder


    Instructions


    1. In a large bowl, combine beans, peppers, corn and onion.
    2. In a small bowl, whish together olive oil, vinegar, lime juice, lemon juice, sugar, salt, garlic, cilantro, cumin and pepper.
    3. Season to tast with hot sauce and chili powder.
    4. Pour olive oil dressing over veggies; mix well.
    5. Chill thoroughly and serve cold.
