    SOPAIPILLA'S (Mexican Honey Puffs)

    Source of Recipe

    Friend- Jill Whitley

    Recipe Introduction

When we were stationed in the Phillipines, the Whitley's and us would get together and play board games and make these to snack on cuz they were "cheap" and easy to make!
    Those were GOOD TIMES!!!

    List of Ingredients

    1 T. Shortening
    2 C. Flour
    1 t. Baking Powder
    1/2 t. Salt
    2/3-3/4 C. Cold Water
    Veg. Oil for deep frying
    Honey Butter

    Recipe

Sift together; Flour, b. powder, and salt. Cut in the shortening until mixture resembles fine crumbs.
Gradually add enough water to make a stiff pastry like dough, tossing with a fork til all the flour is moistened and dough almost cleans sides of bowl.
Gather dough into a ball; divide into halfs and shape into 2 flattened rounds. Cover to prevent drying out.

    Meantime heat your oil.
Roll dough 1/8-1/4" thick, cut into squares 3x3"
Fry in the hot oil until puffed and golden 1-2 minutes.

    Serve with honey butter-YUM!
