    I love sourdough bread.

    List of Ingredients




    4 C. Flour
    2 T. Sugar
    1 t. Salt
    2 T. Shortening
    1/4 t. B. Soda
    1-2 Eggs

    Recipe



    Set sponge as usual, saving 1/2 C.
    Sift dry ingredients into sm. bowl, make a well in the center. Add shortening to the sponge and mix well. Add the beaten eggs and pour int the well of flour. Add enough flour to make a soft dough for kneading. Knead on floured surface for 10 minutes. Place in greased bowl, cover w/towel and let raise in warm place for 2-4 hrs. or doubled in bulk. (If you want bread to rise faster, add some dry yeast dissloved in 1/4 C. warm water to the sponge)

    Dissolve the B. soda in a T. warm water and add to the dough. Knead completely in. Shape dough into loaves or rolls and put in greased baking pans and let raise again. When doubled once again, Bake at 375' for 50-60 min. for bread loaves, lesser for rolls.
