    Apple Walnut Cake

    List of Ingredients

    3 Large eggs, beaten
    2 Cups sugar
    1/2 Cup peanut or canola oil
    2 Tsp vanilla extract
    2 Cups flour
    2 Tsp baking soda
    2 Tsp ground cinnamon
    1/2 Tsp freshly grated nutmeg
    1/2 Tsp salt
    2 Cups diced, cored, unpeeled apples (Granny Smith
    or Pippin work great)
    1 Cup coarsely chopped walnuts


    In a large bowl, beat together eggs, sugar, oil, and vanilla. Combine
    flour, baking soda, cinnamon, nutmeg, and salt. Mix into batter.
    Fold in apples and nuts. Spread into a 9"x13"x2" baking pan. Bake at
    325F for 50-60 minutes or until cake tests done. Cool, and ice with
    cream cheese frosting, if desired

    Cream Cheese Frosting

    1 8 oz package cream cheese, softened
    1/4 Cup (1/2 stick) butter, room temperature
    1-1/2 Cups powdered sugar, sifted
    1/2 Tsp vanilla extract
    Milk, if needed to thin

    Combine all ingredients in a small mixing bowl, and whip until smooth.
    If too thick, thin with a little milk until spreadable.
