    1 large onion, chopped
    1 green pepper, cored, seeded and chopped
    1 rib celery, chopped
    3-6 garlic cloves, finely chopped
    1 can (28 oz) diced tomateos with their liquid
    1 lb fully cooked smoked sausage, sliced
    1/2 tsp dried thyme
    salt and freshly ground pepper
    cayenne pepper or hot sauce to taste
    3/4 lb shrimp, peeled and deveined
    cooked white rice

    Recipe



    Mix all the ingredients except the shrimp and rice in a slow cooker and cook covered on low for 7-8 hours. Stir in the shrimp and cook covered until the shrimp are cooked through, about 1 hour. Serve with white rice. Serves 6-8.
