    2 boneless pork chops

    1/2 to 1 cups tomato juice (low sodium, if available)

    Salt and pepper to taste

    1/3 of an onion, thinly sliced


    Preheat oven to 325 degrees.

    Place pork chops in a small baking dish.

    Season pork chops with salt and pepper. Pour tomato juice over chops and top with sliced onions.

    Cover baking dish with foil and cook for 30 minutes. Add more juice to baking dish if needed.
