Fruit Salad with Orange Mayonnaise

2 bananas, peeled and sliced
1 Granny Smith or other tart apple, cored and chopped
1 ripe pear, cored and chopped
1 cups (250 ml) diced pineapple
1 cup (250 ml) seedless grapes
2 ribs celery, chopped
1/2 cup (125 ml) coarsely chopped almonds, walnuts, or pecans
Salt and freshly ground pepper to taste
1 cup (250 ml) orange mayonnaise (recipe below)
1 cup (250 ml) fresh orange juice
1/2 cup (125 ml) mayonnaise
1/2 cup (125 ml) sour cream
Finely grated zest of 1 orange
Combine all ingredients and toss well to combine. Serve chilled.
Serves 6 to 8.
Bring the orange juice to a boil in a small saucepan over moderate
heat. Reduce the heat and simmer uncovered until the juice is reduced
to about 2 tablespoons of thick syrup. Combine with the remaining
ingredients and mix well. Makes 1 cup (250 ml).
