    Spicy Sweet Potato and Smoked Sausage So

    List of Ingredients

    4 ounces smoked sausage, diced (optional if you want to go veggie)
    1/4 cup onion, diced
    1/4 cup celery, chopped
    1/3 teaspoon cayenne (give or take, depending on how spicy you like it), OPTIONAL
    1 1/2 cups sweet potatoes, peeled and large-diced
    1 tablespoon flour
    1 1/2 cups chicken broth or vegetable broth
    salt and pepper to taste


    Saute sausage in a sauce pan for 5 minutes over medium heat; add vegetables and continue to saute for an additional 5 minutes; add flour and cook for 2 more minutes; add stock, salt and pepper and stir until smooth. Simmer for 20 minutes until potatoes are soft. Give it a good stir and serve.

    SERVING SUGGESTIONS: Serve with cornbread or your favorite bread from the breadmaker or grocery store. Naturally, a big salad is appropriate!

    VEGETARIANS: Omit sausage.
