    12 ounces corned beef (canned or cooked and shredded)
    1 cup Swiss cheese, finely shredded
    14 ounces sauerkraut, well drained
    1/4 cup red onion, finely chopped
    3/4 cup whipped cream cheese
    1/2 cup Thousand Island salad dressing
    1/2 teaspoon black pepper, freshly ground (or to taste)
    2 packages Caraway Crackers


    Remove as much fat from corned beef as possible. Thoroughly mix all ingredients, except crackers, with fork and refrigerate until ready to serve. Garnish with parsley. Best served at room temperature with Caraway crackers.

    Helpful hints:

    Add extra Swiss cheese on top and broil until brown and bubbly. Serve warm.
