1 reg size can crushed pineapple
1 tbsp flour
2 eggs, dash salt
1/4 c of sugar or less
1 1/2 slices of bread
Combine flour, eggs and sugar and mix.
Add pineapple. Melt 1/3 cup margarine and cut 1 1/2 slices of bread in cubes and saturate with melted margarine. Add most of the bread crumbs to previous mixture and then add remaining to top.
Bake in a 350 oven uncovered for about 30 min or until golden in color. I double this and use a 2 quart casserole, otherwise use a 1 or 1/2 qt. casserole.
I have made this on Easter for the past 20+ years and it has become a tradition!
