    1 tablespoon graham cracker crumbs
    1 1/2 cups nonfat cottage cheese
    1 cup Egg Beaters, divided
    1/2 cup sugar
    4 ounces nonfat cream cheese
    1/4 teaspoon grated lemon peel
    1 tablespoon lemon juice
    Fresh fruit, for garnish

    Sprinkle cracker crumbs on bottom and sides of lightly greased 9 x 9 x 2-inch baking pan; set aside. Blend cottage cheese and 1/2 cup Egg Beaters in electric blender container until smooth. Pour mixture into large bowl.

    Mix cottage cheese mixture, remaining Egg Beaters, sugar, cream cheese, lemon peel and lemon juice with electric mixer at low speed for 2 minutes. Pour into prepared pan.

    Bake at 325F for 50 minutes or until set and slightly browned. Cool in pan on wire rack. Cover; chill at least 2 hours. Cut into squares to serve. Garnish with fresh fruit if desired. Makes 9 servings.

    Per serving (without garnish): 105 calories, 0 g. fat, 0 mg. cholesterol, 268 mg. sodium.
