    Shrimp Kabobs

    1/4 cup lime juice
    1 Tbsp. honey
    1 tsp. dried thyme leaves, crushed
    1 lb. jumbo shrimp, thawed
    3 small cherry tomatoes, quartered
    4 green onions, cut into 2-inch pieces
    2 green peppers, cut into wedges
    1 lime, cut into wedges
    6 skewers

    In a storage bag, combine lime juice, honey, and thyme. Mix well.
    Add shrimp and cover. Marinade in refrigerator for 30 minutes. Drain marinade, reserving the marinade. On 6 skewers, alternately thread shrimp, tomatoes, green onions, and green peppers. Top each skewer with one lime wedge. Grill, covered, over medium coals for 3 to 4 minutes or until hot. Turn and brush each skewer occasionally with the marinade mixture. Serve with white rice.
