Source of Recipe
1 lb Shrimp, uncooked, thawed, cleaned and deveined
2 Tbsp olive oil
1/4 cup onion, diced
1/4 cup green pepper, diced
1/4 cup mushrooms, quartered
1 garlic clove, whole
1/4 tsp black pepper
1/2 tsp salt
1 16 oz can diced tomatoes
Directions: 1. Sauté onion, green pepper, mushrooms and garlic in olive oil.
2. Add seasonings and tomatoes. Bring to simmer.
3. Add shrimp. Simmer until shrimp are cooked, about 3 minutes.
Optional spicier version: add red pepper or Tabasco sauce to taste.
