    List of Ingredients

    • 4 lbs. tomatoes, peeled, seeded and chopped (6 cups)
    • t. salt
    • 1 c. fresh corn kernels (about 2 ears)
    • 1 c. minced fresh cilantro
    • 1/4 c. finely chopped Vidalia or other sweet onion
    • 1/4 c. finely chopped red onion
    • 2 t. sugar
    • 1/4 t. freshly ground black pepper
    • 3 T. fresh lime juice
    • 3 jalapeno peppers, seeded and chopped
    • 2 garlic cloves, minced
    • 1 15 ounce can black beans, rinsed and drained
    • 1 (7 oz..) can chipotle chiles in adobo sauce


    1. Place tomatoes in a colander; sprinkle with salt. Toss gently; drain 30 minutes. Combine tomato mixture, cor, and the next 9 ingredients (through beans) in a large bowl. Remove 1 chipotle chile from can, finely chop. Add chile and 8 teaspoons adobo sauc to corn mixture, stirring to combine.
    2. Serves 16 cup servings
