    Pork Tenderloin w/Caramelized Onions

    2 teaspoons oil
    1 large sweet onion (such as Walla Walla or Maui), thinly sliced
    1 teaspoon sugar
    1 lb. pork tenderloin, trimmed of fat
    1/4 teaspoon salt
    1/8 teaspoon pepper

    1. Heat oven to 350F. Heat oil in large skillet over medium-high heat until hot. Add onion; sprinkle with sugar. Cook 12 to 15 minutes or until onion is soft and golden brown, stirring frequently.
    2. Spray 13x9-inch pan with nonstick cooking spray. Place pork tenderloin in sprayed pan. Sprinkle with salt and pepper. Top with onion mixture.
    3. Bake at 350F. for 40 to 50 minutes or until no longer pink in center and thermometer inserted in center registers 160F.
