No Yolk Potato Salad

1/3 cup nonfat mayonnaise or salad dressing
1/3 cup plain low-fat yogurt
2 tsp. Dijon-style or prepared mustard
1/4 tsp. salt
1/8 tsp. pepper
Whites of 3 hard-cooked eggs, chopped
2-1/2 cups peeled, cubed, and cooked potatoes
1 stalk celery, thinly sliced
1/4 cup sliced green onion
In a large mixing bowl stir together mayonnaise or salad dressing, yogurt, mustard, salt, and pepper. Add egg whites, potatoes, celery, and onion. Toss gently to coat. Cover and chill for 6 to 24 hours. Makes 6 side-dish servings.
