    Curry Beef Stir-Fry

    1 pound boneless top sirloin steak, thinly sliced
    1 onion, chopped
    2 garlic cloves, minced
    2 teaspoons olive oil
    3 cups cooked brown rice
    1 1/2 teaspoons grated fresh ginger
    1 1/2 teaspoons curry powder
    1/2 teaspoon salt
    1/2 teaspoon ground red pepper
    2 medium apples, coarsely chopped
    1/2 cup apple juice
    2 tablespoons slivered almonds, toasted (optional)

    Saute first 3 ingredients in hot oil in a large nonstick skillet over medium-high heat 5 to 7 minutes or until onion is tender. Stir in cooked rice and next 4 ingredients.
    Stir in apple and apple juice; cook, stirring often, until thoroughly heated. Sprinkle with almonds, if desired.

    Yield: 6 servings
