    Scalloped Potatoes

    3 tablespoons acceptable margarine (no more than 2g saturated fat per tablespoon)
    2 tablespoons all-purpose flour
    2 cups fat-free (skim) milk
    1/4 teaspoon freshly ground black pepper
    1/8 teaspoon onion powder
    1/8 teaspoon garlic powder
    vegetable oil spray
    5 medium potatoes, peeled and thinly sliced
    1/2 cup chopped onion

    Preheat oven to 350 F. Melt margarine in a small saucepan. Add flour and mix well. Gradually add milk while stirring constantly. Cook over medium heat, stirring until thickened. Add pepper, onion powder and garlic powder. Stir and remove from heat.

    Lightly spray a 1 1/2-quart casserole dish with vegetable oil spray.

    Place potatoes and chopped onion in bottom of casserole. Add sauce and stir lightly.

    Cover and bake 30 minutes.

    Stir gently and bake uncovered an additional 30 to 40 minutes, or until potatoes are tender and lightly browned. Serve hot.
