Judy's Potato Salad

5 lbs. potatoes
1 c. each celery, carrots, onions and green peppers, chopped
2 hard boiled eggs(or more if desired)
2 T. brown mustard
salt and pepper to taste
green pepper rings(optional)
Peel and cut up potatoes in 1 inch pieces. Cook potatoes in salted water for about 12 minutes.
Mix mustard with a small amount of mayonnaise.
Combine all vegetables in a bowl. Add salt and pepper to taste. Stir in the mustard mixture, incorporating thru out the vegetables. Add mayonaise to make to make a nice dressing, coating all the vegetables thoroughly. Slice hard boiled eggs and incorporate most of them into salad, saving a few slices for the top of the salad. Top is you wish with green pepper rings and paprika.
